It’s Sunday and you have an appetite for fresh vegetables? No problem: you’ll find what you’re looking for on your kitchen window sill or on your balcony, whatever the store’s opening hours. Microgreens grow in the smallest of spaces and still deliver the full power of the plant!
Small but Mighty: Microgreens
Healthy raw foods are all the rage and many people want to grow lettuce, herbs and sprouts themselves. If there were no question of space… For all those who do not have a garden or flower bed in a common space, now there is a brilliant solution: microgreens! Petit vert is grown from normal vegetable and herb seeds such as broccoli, bok choi, radishes, beets, watercress, dill, and basil. Legumes such as peas and beans are also suitable, as are wheatgrass and amaranth. However, it is harvested shortly after seedling formation. Once the little plant has formed cotyledons and an extra leaf or two, it’s time to feast. Microgreens are perfect for use as ingredients in raw food recipes and as a healthy addition to all kinds of foods.
Green leafy vegetables in mini format have a milder flavor than in adult format. If you don’t like cabbage, you can try it here. In terms of nutrients, the small ones are not inferior to the large ones, on the contrary: compared to low-weight ones, the concentration of vitamins, minerals and trace elements is even higher. Therefore, the mini-green can rightly be called a superfood. If you want to grow microgreens yourself, you don’t need any special equipment at first. A deep plate or shallow containers that you fill with seeds or compost soil are sufficient as a seed tray. The seeds are densely distributed, squeezed out a little and everything is moistened with a spray bottle – ready. Regularly moistened with water, the seeds germinate in a few days and after about two weeks there will be fresh green on your plate. By the way, some microgreens even grow without soil: instead, the seeds are planted on coconut fiber, nutritious substrate and even kitchen paper. It is best to always follow the instructions on the seed packet.
This is how microgreens can be used in the kitchen
How you enjoy microgreens is completely up to your imagination. You should not overheat tender green, as this will lead to loss of valuable ingredients. To enjoy them raw, simply add the microgreens to smoothies, blend them into salads, sprinkle them as a garnish in soups, eat them as a sandwich topping, or refine a Buddha bowl with them. Spicy plants like radish or mustard can also be wonderfully used as a spice. Spice up herb quark for your boiled potatoes! It’s best to start with one or two fast-growing, low-maintenance varieties, such as watercress and lettuce, and then move on to legumes or wheatgrass – it’s worth it!
